In addition to Marsala, the vine can be vinified in purity with the aid of cryomaceration, a grace to which it is able to give wines of great organoleptic depth, sapid, perfumed, and above all with a good longevity potential, superior to all the Sicilian whites, with the exception of those of Etna. Depending on the production areas, each wine made from Grillo grapes has different organoleptic characteristics: the areas of overt quality are the districts of Triglia, Favarotta, Spagnola, Birgi.
