Provolone del monaco DOP

The provolone del monaco PDO is a cheese of at least six months of maturation, outside it has a thin crust yellowish color with slightly dark tones, almost smooth with slight creeks in correspondence of the laces used for the couple support that divide the provolone in a minimum of six faces; instead, it has a cream-colored paste with yellowish tones, elastic, compact, uniform and without flaking and soft. The holes that are present are of variable diameter up to 5 mm, with some sporadic presence of more holes up to 12 mm towards the center. After 6-8 months the provolone tends to turn yellow creating a thicker skin and with the passage of time tends to acquire an increasingly spicy taste with an aspect of pasta more and more consistent
