Sausage

Sausage is another Italian product that varies greatly depending on the geographical area, both for the denomination and for the production methods. The sausage is usually produced by filling a natural pork or mutton casing with a mixture of lean and fat parts cut into cubes and mixed with salt. The mixture obtained is usually added wine, mainly red, and other spices, such as pepper, chilli pepper, coriander, fennel, nutmeg, even sugar.
