Raw ham
The raw ham is a typical Italian cured meat obtained from dry salting of the pig's leg, in particular from animals that have reached a weight of about 150 kg. It is a preserved meat, or rather, a raw and seasoned salami.
The raw ham is composed of the leg of the pig with bone and the outer crust necessary for storage; moreover, in the cutting points, the raw ham is covered with "lard" as an effective preservative.
Other gastronomic specialties obtained with the same cut in other European countries, can not be assimilated to this Italian product of excellence.
