Lard
Lard is the product of salting, flavoring and maturing of the fat layer that is just below the pig's skin. This fat cut of the pig is taken from the neck, from the back and from the upper part of the hips of the animal, it is cut, possibly scalped, salted, spiced and seasoned in suitable basins.
