Among the savory meat products, bresaola falls into the category of raw raw whole cold cuts.
The Bresaola usually appears as a cylinder or a parallelepiped, more or less regular, wrapped in a grayish envelope, with or without binding. When cut, the bresaola appears reddish, more or less dark or lit depending on the meat used, compact, with poor veins due to deposits of fat and natural connective. It is consumed in slices, as an appetizer or as a main course.
