Alto Adige PGI (in Ladino cioce) is a specialty of South Tyrolean charcuterie. It consists of a piece of pork leg mistakenly called completely boneless raw ham, slightly smoked, typical of the territory of South Tyrol, in Italy.
Only selected producers can produce Speck. When buying, pay attention to the quality mark.
