Truffles

Truffle is an extremely valuable food,


it is sought after, very expensive. The typical penetrating and persistent perfume develops only after maturation and has the purpose of attracting wild animals (pig, wild boar, badger, dormouse, fox), despite the covering of earth, to spread the contained spores and perpetuate the species.
Jars are normally prepared with whole small truffles and also other products based on this mushroom; a very small quantity of truffle is enough to flavor a dish or sauce.
